Turkey Chili with Brown Rice

Hearty ground turkey and brown rice chili - a cozy and satisfying meal for chilly nights.
Ingredients:
  • 2 tablespoons olive oil, divided
  • 1 medium onion, chopped
  • 1 medium carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 1 tablespoon chopped garlic
  • 1.25 pounds lean ground turkey
  • 1 (28 ounce) can crushed tomatoes
  • 2 cups low-sodium vegetable broth, divided
  • 0.25 cup uncooked brown rice
  • 2 tablespoons chili powder
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic-pepper seasoning
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon ground black pepper
  • 1 (15 ounce) can low-sodium white beans, rinsed
  • 1 teaspoon hot pepper sauce (such as Cholula®)
  • 0.25 cup tomato paste
Instructions:
  • In a large pot over medium heat, warm 1 tablespoon of olive oil. Saute onion, carrot, and celery for 10 minutes. Stir in garlic and cook for an extra 2 minutes. Using a slotted spoon, transfer the vegetables to a separate dish.
  • In the same pan, heat the rest of the olive oil and cook the ground turkey until browned and crumbly, around 5 to 7 minutes. Reintroduce the vegetables. Incorporate canned tomatoes, broth, uncooked rice, chili powder, Worcestershire, oregano, garlic-pepper seasoning, paprika, cumin, and pepper. Bring to a boil, then cover and reduce to a simmer. Cook for 1 hour.
  • Taste and adjust spices as needed. Stir in white beans and hot sauce. If chili is too thin, mix in 1/4 cup of tomato paste. Cover and simmer over medium-low heat for an additional 15 minutes.
