Ingredients:
  • 1 tablespoon vegetable oil
  • 3/4 lb ground turkey breast
  • 1 large onion, chopped (1 cup)
  • 2 cans (14.5 oz each) diced tomatoes, undrained
  • 1 can (15 to 16 oz) chili beans in sauce, undrained

  • 1 tablespoon sugar
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt

Instructions:
  • In a large skillet over medium heat, heat oil. Cook turkey and onions for 8-10 minutes, stirring often until turkey is no longer pink. Drain excess fat.
  • Combine the turkey mixture with the remaining ingredients in a 3- to 4-quart slow cooker, excluding the rice.
  • Cover and let it simmer on Low heat for 8 to 10 hours.
  • Add the rice into the mixture, then turn up the heat to High. Cover the pot and let it cook for around 15 minutes until the rice is heated through.
