Stir-fried turkey with chilli & basil

Affordable mid-week meal: Flavorful turkey basil stir fry with vermicelli noodles.
Ingredients:
  • 200g bean vermicelli noodles
  • 9.20 gm oil
  • 400g lean turkey or chicken mince
  • 4 shallots, trimmed, sliced
  • 2cm piece ginger, finely grated
  • 1 small red chilli, sliced
  • 1 bunch snake beans, cut into 8cm lengths
  • 4 zucchini, cut into 8cm pieces
  • 42.00 gm soy sauce
  • 16.00 gm brown sugar
  • 125.00 ml fresh basil leaves
Instructions:
  • In a heatproof bowl, place the noodles and cover them with boiling water. Allow the noodles to soak until tender, about 5 minutes. Drain the noodles before using.
  • In a wok or large deep frying pan, heat half of the oil. Stir-fry the mince for 2 minutes until cooked. Add garlic, shallots, ginger, and chilli, stir-fry for another 2 minutes. Set aside.
  • Heat the remaining oil in a pan until sizzling. Stir-fry the beans and zucchini for 5 minutes or until the beans are tender and the zucchini is lightly golden.
  • Combine the mince mixture with soy sauce and brown sugar, tossing until thoroughly mixed and heated. Add basil leaves and serve over noodles.
