Whip up flavorful Thai fried rice using leftover ingredients from your fridge.
Ingredients:
  • 36.40 gm peanut oil
  • 1 onion, finely chopped
  • 3 garlic cloves, crushed
  • 2 long green chillies, seeds removed, finely chopped
  • 2 tsp grated fresh ginger
  • 16.00 gm brown sugar
  • 1 red capsicum, cut into 1cm cubes
  • 200g thin green beans, cut into 2cm lengths
  • 4 makrut lime leaves, thinly sliced (see notes)
  • 265g jasmine rice
  • 480g cooked turkey
  • 48.80 gm fish sauce
  • 40.00 ml gluten-free tamari (see notes)
  • 125.00 ml Thai basil leaves (see notes or use regular basil)
  • Lime wedges, to serve
Instructions:
  • In a wok over medium-high heat, warm the oil until shimmering. Sauté the onion for 2-3 minutes until soft. Introduce the garlic, chili, ginger, and sugar, stirring for 1 more minute until aromatic and the sugar melts evenly.
  • Combine the chopped capsicum, beans, and makrut lime leaves in the pan and stir-fry for 1-2 minutes until the veggies are tender. Mix in the cooked rice, chopped turkey, fish sauce, and tamari, and stir-fry for an additional 2-3 minutes until everything is heated through. Finally, add the basil, then dish out the rice into bowls and serve with lime wedges for squeezing.
