Revive holiday turkey with quick and delicious fried rice for a family favorite meal.
Ingredients:
  • 36.80 gm vegetable oil
  • 3 eggs, lightly beaten
  • 1 medium red capsicum, chopped
  • 82.50 ml frozen peas
  • 62.50 ml frozen corn
  • 300g leftover cooked turkey, shredded
  • 3 green onions, chopped
  • 100g snow peas, trimmed, thinly sliced
  • 42.00 gm soy sauce
  • 43.20 gm hoisin sauce
  • 800.00 gm cooked white long-grain rice, cooled (see note)
Instructions:
  • 1. Preheat a wok over high heat and add half of the oil. 2. Swirl the oil to evenly coat the wok. 3. Pour in the egg and swirl to create a thin layer at the base of the wok. 4. Cook for about 1 minute or until the egg is just set. 5. Transfer the cooked egg to a cutting board, roll it up, and thinly slice it.
  • In a wok over medium-high heat, sauté capsicum, peas, corn, turkey, onion, and snow peas in the remaining oil until heated through, about 1 to 2 minutes.
  • Drizzle in soy sauce, hoisin sauce, and rice. Heat for 2 to 3 minutes until warmed. Gently fold in sliced egg. Enjoy your delicious meal.
