Sausage with Mango Salsa

Zesty cilantro-lime rice topped with refreshing mango salsa and pan-fried turkey sausage creates a colorful, flavorful dish.
Ingredients:
  • 1 fresh mango, peeled and chopped
  • 0.5 fresh peach, peeled and chopped
  • 1 lime, juiced
  • 1 tablespoon chopped red onion
  • 1 tablespoon chopped fresh cilantro
  • 2 cups water
  • 1 cup white rice
  • cooking spray
  • 3 Italian turkey sausage links
  • 0.5 cup orange juice
  • 2 pinches garlic salt, or to taste
Instructions:
  • Combine ripe mangoes and peaches in a small bowl. Squeeze the juice of 1 lime over the fruit mixture, along with onion and 1 tablespoon of cilantro. Mix everything together thoroughly.
  • In a saucepan, bring water to a lively boil. Stir in rice, juice of 1 lime, and 1 tablespoon cilantro. Reduce heat to medium-low, cover, and let it simmer until the rice is tender and has absorbed all the liquid, about 15 to 20 minutes. Set aside rice to keep it warm.
  • Coat a big nonstick skillet with cooking spray over medium heat. Sear and stir sausages until golden brown, around 5 to 10 minutes. Transfer sausages from skillet and chop into bite-sized pieces.
  • Pour the orange juice into the skillet with the sausage and bring it to a simmer. Add the chopped sausage back to the skillet, cover, and simmer in the orange juice until it reduces to a syrup and the sausage is cooked through, approximately 5 minutes. Mix in the mango salsa with the sausage and stir for about 30 seconds. Sprinkle with garlic salt and serve over rice.
