Elevate traditional sausage rolls with spicy curry paste and creamy mango yogurt dip.
Ingredients:
  • 500g Brand 3 star beef mince
  • 250.00 ml dry breadcrumbs, plus 250.00 ml extra
  • 1 zucchini, grated
  • 1 carrot, grated
  • 40.00 ml chives, chopped
  • 40.00 ml parsley, chopped
  • 56.00 gm mild curry paste
  • 2 eggs, 1 lightly beaten
  • 4 sheets frozen puff pastry, thawed
  • 125.00 ml Greek-style yoghurt, to serve
  • 20.00 gm mango chutney, to serve
Instructions:
  • Preheat your oven to 220C (or 200C for a fan-assisted oven) and prepare 2 baking trays by lining them with baking paper.
  • Combine the minced meat, breadcrumbs, zucchini, carrot, chives, parsley, curry paste, and whole egg. Use your hands to thoroughly mix the ingredients together until well combined.
  • Cut each pastry sheet in half. Shape mince mixture into logs and place in the center of each pastry piece. Brush edges with beaten egg, roll up, and seal. Cut each into 3 pieces and place seam side down on trays. Make 2 slashes on each sausage roll, brush with remaining egg, and sprinkle with extra breadcrumbs.
  • Bake for 20 minutes until the pastry is golden and puffed. Combine yoghurt and mango chutney in a bowl. Serve with sausage rolls.
