Curried beef and vegetable sausage rolls

Healthy, kid-friendly sausage rolls for easy weeknight dinners.
Ingredients:
  • 18.40 gm vegetable oil
  • 1 brown onion, finely chopped
  • 1 garlic clove, crushed
  • 300g lean beef mince
  • 5.00 gm curry powder
  • 1 small carrot, grated
  • 1 small red capsicum, nely chopped
  • 1 small ripe tomato, finely chopped
  • 22.20 gm tomato paste
  • 24.40 gm Worcestershire sauce
  • 42.00 gm lemon juice
  • 40g baby spinach, chopped
  • 187.50 ml finely shredded green cabbage
  • 12 sheets filo pastry
  • Olive oil cooking spray
  • 12.00 gm sesame seeds
  • Salt-reduced tomato sauce, to serve
  • 100g green beans, trimmed
  • 1 small gem lettuce, leaves separated
  • 200g tomato medley, halved
  • 3 baby cucumbers, quartered lengthways
  • 36.40 gm extra virgin olive oil
Instructions:
  • In a large frying pan over medium-high heat, heat vegetable oil. Add onion and sauté until softened, about 5 minutes. Stir in garlic and cook for an additional minute. Crumble in the mince and cook, breaking it up with a wooden spoon, until browned, about 3-4 minutes. Sprinkle curry powder over the mixture and cook, stirring, for 1 more minute until fragrant.
  • Combine carrot, capsicum, tomato, tomato paste, Worcestershire sauce, and 1/4 cup water in a saucepan. Bring to a boil, then lower heat and simmer uncovered for 5 minutes until sauce thickens. Stir in lemon juice, spinach, and cabbage and cook for 1 minute until spinach wilts. Remove from heat and let it cool for 10 minutes before serving.
  • Preheat the oven to 220C/200C fan-forced and line a large baking tray with baking paper.
  • Lay a sheet of filo on a flat surface and lightly spray it with oil. Fold it in half lengthwise. Spoon 1/4 cup of mince mixture along one short end of the filo, leaving a 3cm border. Fold the pastry edge over the mince mixture, then fold in the sides and roll up the pastry to seal the filling. Place the roll, seam-side down, on a prepared tray. Repeat with the remaining pastry and mince mixture to make 12 rolls. Lightly spray the rolls with oil, sprinkle with sesame seeds, and bake for 12 to 15 minutes until the pastry is golden and crisp.
  • Prepare the No-cutlery Salad by quickly blanching beans in boiling water for 2 minutes until tender. Drain, rinse in cold water, then assemble with lettuce, tomato, and cucumber in a bowl. Whisk olive oil and lemon juice, season with salt and pepper, and drizzle over the salad. Enjoy!
