Try a flavorful mince stir-fry loaded with fresh veggies for a quick and healthy meal!
Ingredients:
  • 80ml soy sauce
  • 1 red bird's eye chilli, deseeded, finely chopped
  • 18.20 gm olive oil
  • 1 red onion, sliced
  • 2 garlic cloves, crushed
  • 30.00 ml grated fresh ginger
  • 10.00 gm Keens original curry powder
  • 500g beef mince
  • 250g cabbage, finely shredded
  • 1 red capsicum, deseeded, sliced
  • 150g mushrooms, halved
  • 1 bunch broccolini, trimmed, cut into short lengths
  • 1 carrot, peeled, cut into matchsticks
  • 125.00 ml fresh coriander leaves
Instructions:
  • Combine soy sauce and chili in a small bowl. Heat half of the oil in a wok over medium-high heat. Stir-fry onion for 3 minutes. Add garlic, ginger, and curry powder; cook for 30 seconds. Add the mince and cook for 4-5 minutes, breaking up lumps. Transfer to a plate and set aside.
  • Add the rest of the oil to the wok and stir-fry the cabbage, bell pepper, mushrooms, broccolini, and carrot for 5-7 minutes until the veggies are tender-crisp.
  • Add the minced meat back to the wok along with the soy sauce and chili. Stir until everything is heated through. Take the wok off the heat and mix in the fresh coriander. Serve right away.
