Simplify with one-pot fragrant curried beef and lentil casserole.
Ingredients:
  • 9.20 gm Olive Oil
  • 400g Beef Chuck Steak
  • 1 brown onion, coarsely chopped
  • 1 carrot, peeled, coarsely chopped
  • 1 garlic clove, crushed
  • 5.00 gm curry powder
  • 400g can Smart Buy Diced Tomatoes
  • 400g can Lentils, rinsed, drained
  • 400g can Chickpeas, rinsed, drained
Instructions:
  • In a medium heavy-based saucepan over high heat, heat the oil until shimmering. Add the beef and cook, stirring occasionally, for about 5 minutes until nicely browned on all sides.
  • Sauté the onion, carrot, garlic, and curry powder together until the onion softens, about 3 minutes.
  • Combine the tomato, lentils, chickpeas, and 1 1/2 cups (375ml) water in a pot. Season to taste. Bring to a boil, then reduce heat to low, cover, and simmer for 1 1/4 hours. Uncover and cook for an additional 15 minutes until the sauce slightly thickens and the beef is tender. Serve and enjoy!
