Curried beef and pappadam nachos

Top crispy pappadams with mild beef curry for a delicious combination.
Ingredients:
  • 20.00 ml ghee
  • 1 brown onion, finely chopped
  • 500g beef mince
  • 56.00 gm korma curry paste
  • 175g (3/4 cup) Maharajah's Choice Red Split Lentils, rinsed
  • 250ml (1 cup) Mutti Tomato Passata
  • 500ml (2 cups) beef stock
  • 20 Pappadams
  • 332.50 ml baby spinach leaves
  • Greek yoghurt, to serve
Instructions:
  • In a large saucepan over medium-high heat, melt ghee. Cook onions, stirring, until golden, about 3 minutes. Increase heat to high, add mince, and cook until browned, about 5 minutes. Stir in curry paste, then add lentils, passata, and stock. Reduce heat to medium and cook, stirring occasionally, until lentils are soft and liquid has reduced, about 15 minutes.
  • Microwave pappadams according to package instructions.
  • Lay out the pappadams in individual bowls, then generously layer with the flavorful beef mixture and fresh spinach. Drizzle with creamy yogurt before serving.
