Family-friendly beef and potato pots for all ages.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, thinly sliced
  • 20.00 gm mild curry powder
  • 500g beef mince
  • 400g can diced tomatoes
  • 500g desiree potatoes, peeled, chopped
  • 100g sour cream
  • 2 green onions, thinly sliced
Instructions:
  • In a large saucepan over medium heat, gently sauté brown onion in oil until tender, about 5 to 7 minutes. Stir in curry powder and cook for an additional minute until it becomes fragrant.
  • Add the mince and cook while breaking it up with a wooden spoon for 5 minutes until browned. Stir in tomatoes and 3/4 cup of cold water. Let it simmer for 15 to 20 minutes until thickened. Season with salt and pepper to taste.
  • In a large saucepan, simmer potatoes in cold water until tender. Drain and mash in a bowl. Mix in sour cream, green onions, salt, and pepper until well combined.
  • Evenly divide the beef mixture into four 1 1/4 cup ramekins. Top with the potato mixture and serve.
