Elevate baked potato with spicy curried beef, creamy yogurt, and crisp cucumber topping.
Ingredients:
  • 18.40 gm vegetable oil
  • 150g pumpkin, finely chopped
  • 200g 3 Star Beef Mince
  • 56.00 gm Rogan Josh curry paste
  • 62.50 ml Brand Italian Tomato Passata
  • 165.00 ml light Greek yoghurt
  • 1/2 Lebanese cucumber, finely chopped
  • 40.00 ml mint leaves
  • 4 baked potatoes, to serve
Instructions:
  • In a medium saucepan over medium heat, sauté brown onion and pumpkin in vegetable oil, stirring occasionally, until softened, about 5 minutes.
  • Brown the beef mince by cooking and stirring for 3-4 minutes. Mix in Patak’s Rogan Josh Paste and Coles Brand Italian Tomato Passata. Season, cover, and cook for an additional 5 minutes. Serve over baked potatoes.
  • Finish by generously spooning on creamy light Greek yogurt, and garnish with a delicate sprinkling of finely chopped Lebanese cucumber and 2 tablespoons of torn fragrant mint leaves.
