Jacket potatoes with Texan-style beef recipe

Texan-style beef jacket potatoes - packed with flavor, perfect for lunch!
Ingredients:
  • 6 large brushed potatoes, scrubbed
  • 1/4 quantity Texan-Style Pulled Beef (below)
  • 1/2 x 400g can black beans, rinsed, drained
  • 60g cheddar cheese
  • 1 vine-ripened tomato, finely chopped
  • 1/2 red onion, finely chopped
  • 40.00 ml finely chopped chives
  • Mint leaves, to serve
  • 1.5kg No Added Hormones Beef Brisket
  • 2 brown onions, cut into wedges
  • 500ml beef
  • 60ml cider vinegar
  • 2 garlic cloves, crushed
  • 54.00 gm maple syrup
  • 24.40 gm Worcestershire sauce
  • 20.80 gm tomato sauce
  • 23.40 gm Dijon or American mustard
  • 5.00 gm smoked paprika
  • 2.40 gm onion salt
  • 1 tsp garlic powder
  • 2 tsp dried oregano
  • 2.50 gm ground cumin
Instructions:
  • Preheat your oven to 150°C. Heat oil in a hot pan. Season the beef and sear for 5 minutes on each side until golden. Transfer the beef to a roasting pan.
  • Place the sliced onion around the beef in the pan. In a jug, combine the stock, vinegar, garlic, maple syrup, Worcestershire sauce, tomato sauce, mustard, paprika, onion salt, garlic powder, oregano, and cumin. Pour the mixture evenly over the beef, ensuring it's fully coated.
  • Seal the pan with foil and slow-roast the beef for 3 hours until it's incredibly tender and easily pulled apart with a fork. Bump up the oven temperature to 180°C. Uncover and continue roasting for another 30 minutes until the beef turns a glorious golden brown and the sauce slightly thickens. Rest the beef for 15 minutes before serving.
  • Shred the beef coarsely using 2 forks, then mix it with the pan juices to blend. Season to taste.
  • For delicious jacket potatoes, preheat your oven to 180°C. Poke the potatoes all over with a fork, wrap each in foil, and place on a baking tray. Bake for 1 hour until tender. Unwrap and bake for an extra 10 mins until lightly golden. Let them cool slightly before serving.
  • Combine tender beef strips and flavorful beans in a small saucepan over gentle heat. Simmer for 5 minutes or until warmed.
  • Using a sharp knife, create a cross on the top of each potato and gently press the base to open them up. Fill with beef mixture, sprinkle with cheddar, and bake until the cheese is melted, approximately 5 minutes.
  • In a bowl, mix together the tomato and onion. Serve the potatoes on plates and garnish with the tomato mixture, chive, and mint.
