Curried sausage meatball tray bake recipe

30-minute retro curried sausages tray bake: affordable family favorite at $3.65 per serving.
Ingredients:
  • 9.20 gm olive oil
  • 500g beef sausages
  • 1 brown onion, halved, thinly sliced
  • 7.50 gm cornflour
  • 310ml (1 1/3 cups) Beef Style Liquid Stock
  • 7.50 gm curry powder
  • 2 zucchini, sliced
  • 2 large carrots, peeled, halved lengthways, sliced
  • 1 bunch broccolini, trimmed
  • 150g (1 cup) frozen peas
  • Steamed rice, to serve
Instructions:
  • 1. Preheat the oven to 200°C/180°C fan forced. 2. Heat oil in a large non-stick frying pan over medium-high heat. 3. Divide the meat from each sausage into 3 portions and shape each into a ball. 4. Add the sausage balls to the pan and cook for 4 minutes until browned, tossing occasionally. 5. Add the onion to the pan and cook for 1 minute until starting to soften.
  • In a jug, combine cornflour with 1 1/2 tablespoons of stock to create a smooth paste. Add curry powder and the rest of the stock, stirring well.
  • Place the meatballs and onion in a large baking dish. Add zucchini, carrot, broccolini, and peas. Mix everything together. Pour the flavorful curry sauce on top. Add seasoning. Bake for 15 minutes until meatballs are cooked and veggies are tender. Serve with rice.
