Pork sausage with Thai mango and noodle salad

Elevate your grill game with these flavorful Asian-inspired sausages.
Ingredients:
  • 8 thick pork sausages
  • 150g dried thin rice stick noodles
  • 1 large mango, thinly sliced
  • 1 red capsicum, thinly sliced
  • 375.00 ml bean sprouts, trimmed
  • 187.50 ml fresh coriander leaves, plus extra to serve
  • 2 green onions, thinly sliced, plus extra to serve
  • 42.00 gm lime juice
  • 20.00 ml sesame oil
  • 12.20 gm fish sauce
Instructions:
  • Preheat a greased barbecue hotplate or grill over medium-high heat. Cook sausages, turning occasionally, until browned and cooked through, about 10 minutes. Slice thickly and cover to keep warm.
  • Cook the noodles as per the instructions on the packet. Drain them and rinse under cold water to stop the cooking process. Drain again.
  • In a large bowl, mix together the mango, bell pepper, bean sprouts, cilantro, and onion.
  • In a small bowl, combine lime juice, sesame oil, and fish sauce, whisking until well mixed. Pour 2/3 of the dressing over the salad with noodles. Season with salt and pepper, toss gently to mix. Top the salad with sausage, drizzle the remaining dressing, and sprinkle with extra coriander and onion. Serve and enjoy!
