Elevate pork sausage with a global spice infusion for a flavor-packed meal.
Ingredients:
  • 18.40 gm oil
  • 4 Spicy Pork Gourmet Sausages (aromatic fennel & mild chilli)
  • 2 garlic cloves, crushed
  • 2 tsp finely chopped ginger
  • 2 stalks lemon grass (white part only), finely chopped 400ml can reduced fat coconut milk
  • 4 makrut lime leaves, roughly torn
  • 8.00 gm brown sugar
  • 24.40 gm fish sauce
  • 500g butternut pumpkin, peeled, cut into 3-4cm chunks
  • 1 lime, juiced
  • Coriander leaves, to serve
  • Steamed white rice, to serve
Instructions:
  • In a large saucepan over medium heat, heat half of the oil until shimmering. Brown the sausages until lightly golden. Remove and set aside.
  • Pour in the remaining oil and turn up the heat to medium-high. Add in the garlic, ginger, and lemongrass. Saute for 1 minute, stirring constantly.
  • Combine the coconut milk, makrut lime leaves, brown sugar, fish sauce, and 100ml of water in a pot and bring to a boil. Lower the heat to medium-low and add the pumpkin and sausages. Simmer for 15 minutes.
  • Cut cooked sausages into bite-sized chunks. Mix the sausages and lime juice into the curry. Garnish with torn coriander leaves and serve with rice. For a kid-friendly version, switch to chicken sausages and skip the makrut lime leaves.
