Elevate your sausages with a flavorful Thai salad!
Ingredients:
  • 18.40 gm sunflower oil
  • 4 thick pork sausages or 8 thin pork sausages
  • 1 tsp grated palm sugar (see note) or brown sugar
  • 12.20 gm fish sauce
  • 40.00 ml sesame oil
  • 1 lime, zested, juiced
  • 100g baby Asian salad leaves
  • 1 bunch Thai basil (see note), leaves picked
  • 1 bunch Vietnamese mint (see note), leaves picked
  • 4 spring onions, shredded
  • 1 long red chilli, deseeded, thinly sliced
  • Sweet chilli sauce, to serve
Instructions:
  • Heat sunflower oil in a chargrill or frypan over medium heat. Cook sausages for 6-8 minutes, turning occasionally, until fully cooked. Halve sausages lengthwise and grill for an extra minute for added flavor if desired.
  • Combine sugar, fish sauce, sesame oil, zest, and juice in a screw-top jar, shake well. Toss the dressing with leaves, herbs, spring onion, and chili. Serve the sausages on top of the salad and drizzle with chili sauce.
