Elevate pork tortillas with zesty chili papaya salsa.
Ingredients:
  • 1 red papaya, flesh diced
  • 400g can red kidney beans, drained, rinsed
  • 1 avocado, flesh diced
  • 2 shallots, thinly sliced
  • 82.50 ml chopped fresh coriander
  • 1 small fresh red chilli, finely chopped (deseeded if desired)
  • 21.00 gm fresh lime juice
  • 27.30 gm olive oil
  • 4 pork sirloin steaks
  • 4 flour tortillas
Instructions:
  • In a bowl, mix together papaya, beans, avocado, shallot, coriander, chili, lime juice, and 1 tablespoon of oil. Season with salt and pepper to taste.
  • Preheat a large barbecue plate or char-grill over medium heat. Brush the pork with the remaining oil and season generously with salt and pepper. Grill for 3 minutes on each side for medium doneness or to your preference. Rest covered for 3 minutes before serving.
  • Heat up the tortillas on the barbecue plate or char-grill.
  • Plate the pork evenly on individual serving plates and generously spoon the flavorful papaya mixture over the top. Accompany with warm tortillas for a delicious dining experience.
