Grilled pork on creamy pumpkin mash - irresistibly delicious!
Ingredients:
  • 1kg piece pumpkin, peeled, deseeded, cut into 2cm pieces
  • 20g butter
  • 2.50 gm ginger spice blend
  • Salt & freshly ground pepper
  • 4 (about 150g each) pork cutlets
  • 4.60 gm olive oil
  • Ground lemon pepper
  • 250g green beans, steamed, to serve
Instructions:
  • Microwave the pumpkin until very tender, then drain well. Mash the pumpkin until almost smooth and stir in the butter and ginger. Finally, season with salt and pepper.
  • Preheat a chargrill pan or heavy-based frying pan over medium-high heat. Brush both sides of the pork with oil and season with lemon pepper. Cook the pork in the pan over medium heat for 4 minutes on each side, or until just cooked through. Allow it to rest before serving.
  • Plate the chargrilled pork alongside creamy mashed pumpkin and tender steamed beans.
