Char-grilled pork, sage and pumpkin

Succulent char-grilled pork paired with crispy walnuts and creamy blue cheese for a delightful summer dish.
Ingredients:
  • 4 (about 150g each) pork loin steaks
  • 4 slices prosciutto, halved lengthways
  • 8 sage leaves
  • 60ml maple syrup
  • 23.40 gm wholegrain mustard
  • 500g butternut pumpkin, peeled, seeded, thinly sliced
  • 3 green witlof, leaves separated
  • 100g soft blue cheese, thinly sliced
  • 55g walnut
Instructions:
  • Lay the pork on a tidy work surface and encircle the edge of each steak with prosciutto, tucking sage leaves in as you wrap.
  • Heat up your barbecue or char-grill pan on high. Mix together the maple syrup and mustard in a small bowl. Gently brush the pumpkin with some of the syrup mixture. Grill the pumpkin for 2 minutes on each side until it's golden brown and tender. Then, transfer it to a plate.
  • 1. Pat the pork dry and generously season with salt and pepper. Place the pork on the grill and cook for 3 minutes on each side, or until cooked through. 2. Remove from the grill, transfer to a plate, and loosely cover with foil. Allow to rest for 5 minutes before serving.
  • Distribute the pumpkin, witlof, blue cheese, and walnuts onto serving plates. Top with pork and drizzle with the remaining maple syrup mixture. Serve right away.
