Elevate your Italian meal with a platter of char-grilled ciabatta, radicchio, cured meats, and olive oil. Magnifico!
Ingredients:
  • 1 large ciabatta loaf, sliced 1.5cm thick
  • 1 garlic clove, halved
  • 3 small radicchio, outer leaves removed, cut into wedges
  • 100g thinly sliced lardo (see Notes)
  • 100ml very good-quality aged balsamic vinegar
Instructions:
  • Preheat a chargrill pan over high heat. Brush ciabatta slices with olive oil and grill in batches for 1-2 minutes per side until they are toasted and charred. Rub with garlic, then cool on a wire rack to maintain crispness.
  • Char the radicchio on the grill in batches for 1-2 minutes per side until nicely charred and slightly tender.
  • Assemble by layering grilled bread with lardo, radicchio, a drizzle of balsamic vinegar, and a sprinkle of sea salt and freshly ground black pepper. Serve promptly as an attractive antipasti addition.
