Delicious bruschetta - versatile for any occasion!
Ingredients:
  • 2 red capsicums, roasted, peeled, finely diced
  • 10.00 ml chopped rosemary leaves, plus extra to garnish
  • 18.20 gm olive oil, plus extra to drizzle
  • 4 slices ciabatta bread
  • 1 garlic clove, halved
  • 125g goat's cheese
Instructions:
  • In a large bowl, combine the capsicum with rosemary and olive oil. Season with salt and pepper, then toss to mix. Set aside.
  • Toast the ciabatta until golden in the toaster. Then, rub the toasted ciabatta with garlic and drizzle with a touch of extra olive oil.
  • Spread the creamy goat's cheese deliciously over the ciabatta and generously top with the flavorful capsicum mixture. Enjoy immediately for the best experience.
