Enjoy sunny summer days with a delicious Italian bruschetta.
Ingredients:
  • 4 large slices Italian or country-style bread
  • 9.10 gm extra virgin olive oil
  • 1 garlic clove, halved
  • 3 green shallots, sliced
  • 3 large tomatoes, chopped
  • 1 425g can cannellini beans, rinsed, drained
  • 60g (1/3cup) small black olives
  • 20.00 ml red wine vinegar
  • 80g baby spinach leaves, washed, dried
  • 150g rocket, washed, dried
  • Salt & ground black pepper, to taste
Instructions:
  • Heat up the grill on high.
  • 1. Toast bread slices until golden on both sides under a preheated grill. Brush with 1 tablespoon of extra virgin olive oil and rub with the halved garlic clove. 2. Heat 2 teaspoons of extra virgin olive oil in a large non-stick frying pan over medium heat. Saute the green shallots for 1-2 minutes until soft. 3. Increase heat to high. Add tomatoes and cook for 1 minute. 4. Add cannellini beans, olives, and vinegar. Cook until heated through. 5. Stir in spinach and rocket. Season with salt and pepper.
  • Arrange the bruschetta on plates and generously top with the bean mixture. Serve right away for the best flavors.
