Quick and tasty pork stew ready in no time!
Ingredients:
  • 8 thick pork sausages
  • 1 large red onion, cut into wedges
  • 2 tsp ground coriander
  • 5.00 gm ground cumin
  • 800g can diced tomatoes
  • 270g jar chargrilled capsicums, drained
  • 382.50 gm chicken style liquid stock
  • 375.00 ml couscous
  • 40.00 ml slivered almonds, toasted
  • 82.50 ml finely chopped fresh flat-leaf parsley leaves
  • 100g low-fat feta, crumbled
Instructions:
  • In a large, deep frying pan, heat oil over high heat. Sear sausages for 10 minutes until golden brown and fully cooked. Place on a plate lined with paper towel.
  • Saute onions until soft. Sprinkle in coriander and cumin and saute until aromatic.
  • Combine diced tomatoes, 1/2 cup cold water, capsicum, and sausages in a pot and bring to a boil. Simmer over medium-low heat for 10 minutes or until the sauce thickens.
  • While eagerly waiting, bring the stock to a boil over high heat. In a large heatproof bowl, place the couscous and pour in the stock. Cover and let it sit for 3 to 5 minutes until the liquid is absorbed. Gently fluff the grains with a fork. Mix in the almonds, parsley, and feta. Serve the flavorful couscous alongside the delicious sausage stew.
