Ingredients:
  • 2 tsp sesame oil
  • 800g chicken thigh fillets, halved
  • 160g (½ cup) peach & mango jam
  • 80ml (1/3 cup) barbecue sauce
  • 80ml (1/3 cup) sweetened pineapple juice
  • 2 garlic cloves, finely chopped
  • 1 small brown onion, halved, thinly sliced
  • 42.00 gm soy sauce
  • 2 green shallots, sliced diagonally
  • ½ tsp sesame seeds
  • Steamed white rice, to serve
Instructions:
  • In a large deep frying pan over medium-high heat, heat the oil until shimmering. Cook the chicken for 4-5 minutes on each side, or until golden brown.
  • In a bowl, blend together the jam, barbecue sauce, pineapple juice, garlic, onion, soy sauce, and 1 tsp freshly cracked black pepper.
  • Drizzle jam mixture over chicken and let it simmer. Lower the heat to medium-low. Cook covered, flipping the chicken halfway through, for 15 minutes. Remove the lid and cook, brushing the chicken with the jam mixture, for another 5 minutes until the chicken is fully cooked and the sauce has thickened.
  • Season the chicken generously with aromatic shallot and nutty sesame seeds before serving it alongside fluffy rice. Check out our detailed video demonstration for crafting this mouthwatering Sticky Honolulu chicken dish.
