Indulge in decadent Sticky Toffee Pudding Cookies, packed with dates and topped with luscious toffee glaze.
Ingredients:
  • 1 cup dates, pitted and chopped
  • 1 teaspoon baking soda
  • 0.5 cup brown sugar
  • 0.5 cup butter
  • 2.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • 0.25 teaspoon vanilla extract
Instructions:
  • Preheat oven to 350 degrees F (175 degrees C) and grease 2 baking sheets with butter.
  • Simmer dates and water until tender, then add baking soda and continue to simmer until thickened.
  • Using an electric mixer, cream together brown sugar and butter until smooth. Add in the date mixture, egg, and vanilla extract. Blend in flour, baking powder, and salt. Spoon tablespoonfuls of dough onto baking sheets, spacing them 2 inches apart.
  • Bake in the preheated oven until edges are golden, for about 13-15 minutes.
  • In a sauce pot, combine heavy cream, butter, and brown sugar. Boil for 3 minutes, stirring constantly. Add vanilla extract.
  • Allow the cookies to cool slightly before generously drizzling with warm toffee sauce.
