Indulge in a comforting British dessert of moist date cake drenched in sticky toffee sauce - a classic delight!
Ingredients:
  • 1.5 cups finely chopped, pitted dates
  • 1.25 cups hot brewed tea
  • 0.75 cup white sugar
  • 2 tablespoons white sugar
  • 0.5 cup unsalted butter, softened
  • 3 large eggs
  • 1.5 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon instant espresso coffee granules
  • 0.75 cup brown sugar
  • 1 tablespoon brown sugar
  • 0.75 cup golden syrup
  • 1 tablespoon golden syrup
  • 0.5 cup unsalted butter
  • 1 cup heavy cream
Instructions:
  • Place the dates in a bowl with the tea, allowing them to soak together for 15 minutes.
  • Preheat the oven to 350 degrees F (180 degrees C) and prepare the cake pan by greasing it and lining it with parchment paper.
  • In a mixing bowl, cream together 3/4 cups plus 2 tablespoons of sugar and butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Sift in flour and baking powder, then gently fold into the mixture.
  • Combine baking soda, vanilla, and espresso granules with the date-tea mixture. Mix into the batter until it reaches a smooth, soft, dropping consistency. Transfer the batter into the prepared pan.
  • Bake in the oven until a skewer inserted in the center comes out clean, for about 1 to 1 1/2 hours.
  • As the pudding nears completion in the oven, melt a luxurious combination of 1/2 cup plus 1 tablespoon sugar, 3/4 cup plus 1 tablespoon brown sugar, 3/4 cup plus 1 tablespoon golden syrup, and butter in a sturdy saucepan over a gentle heat. Allow to simmer for 5 minutes before taking it off the heat. Gently mix in cream and vanilla to create a velvety sauce. Place back on the heat and stir until silky, about 2 to 3 minutes.
  • Take the pudding out of the oven. Spoon some sauce onto each plate. Top with a portion of the pudding and drizzle on more sauce. Serve any extra sauce on the side.
