Leftover Turkey Fried Rice

Transform your Thanksgiving leftovers into a flavorful turkey fried rice bursting with deliciousness.
Ingredients:
  • nonstick cooking spray
  • 1 medium onion, diced
  • 0.5 cup frozen peas and carrots
  • 2 tablespoons salted butter
  • 3 cups cold cooked rice
  • 2 cups diced cooked turkey
  • 2 tablespoons soy sauce, or more to taste
  • 1 tablespoon sesame oil, or as needed
Instructions:
  • Prepare a large pan with a light coating of cooking spray. Sauté the onion over medium heat until it turns translucent, approximately 5 minutes. Introduce the frozen vegetables and butter, cooking and stirring until the butter melts and the veggies thaw, for about 3 to 5 minutes.
  • Turn up the heat to medium-high and mix in the rice and turkey. Gradually add soy sauce, 2 tablespoons at a time, stirring until the rice changes color. Push the ingredients to the edges of the pan. Pour sesame oil into the center and coat the rice blend evenly. Push everything to the sides once more. Crack the eggs into the middle of the pan. Scramble until cooked through, about 2 to 3 minutes, then combine them with the rice mixture until fully mixed.
