Transform holiday leftovers into flavorful slow cooker turkey soup, paired with crispy stuffing balls for a delightful meal!
Ingredients:
  • 5 carrots, diced
  • 2 stalks celery, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 0.5 teaspoon ground black pepper
  • 1 leftover turkey carcass with some meat attached
  • 8 cups reduced-sodium chicken broth
  • 1 teaspoon ground thyme
  • 1 teaspoon dried sage
  • 1 bay leaf
  • 3 cups leftover prepared stuffing
  • 0.33333334326744 cup fine bread crumbs
  • 4 cups vegetable oil
Instructions:
  • Preheat a slow cooker on High. Add butter, then carrots, celery, onion, garlic, salt, and pepper. Sauté until golden, about 6 to 8 minutes, stirring occasionally.
  • Combine the turkey carcass, chicken broth, thyme, sage, and bay leaf in the slow cooker. Cover, set on Low heat, and simmer for about 6 hours until the turkey meat is tender and easily falls off the bones.
  • As the soup simmers, craft the stuffing balls by shaping the leftover stuffing into 2-inch spheres. Then, gently roll each ball in bread crumbs until evenly coated.
  • Warm the vegetable oil in a deep pan until it reaches 350 degrees F (175 degrees C).
  • Cook the stuffing balls in the hot oil until beautifully golden, approximately 3 minutes. Use a slotted spoon to transfer the balls onto paper towels to drain. Keep them aside for later.
  • Remove the turkey bones from the soup and garnish each bowl with two stuffing balls.
