Delicious and versatile ground turkey soup with wild rice - perfect for now or later!
Ingredients:
  • 2 tablespoons salted butter, or to taste
  • 2 medium carrots, diced
  • 1 small onion, diced
  • 1 stalk celery, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth, or more to taste
  • 1 cup 1% milk
  • 1 tablespoon dried parsley
  • 1.5 teaspoons ground black pepper
  • 3.5 cups cooked wild rice
Instructions:
  • In a hot skillet, brown and crumble ground turkey for 5 to 7 minutes. Remove from heat and discard grease.
  • In a skillet over medium heat, let the butter melt and add in the carrots, onion, celery, and garlic. Cook and stir until the onion is soft and translucent, approximately 10 minutes.
  • Pour in the flavorful broth, creamy milk, aromatic parsley, fragrant thyme, and a dash of pepper. Gently mix in the succulent turkey and bring the mixture to a boil. Lower the heat to medium-low and let it simmer for 30 minutes. Finally, add the rice and cook until heated through, approximately 5 minutes.
