Tomato-basil soup infuses savory depth into a turkey, goat cheese, and cavatappi pasta bake.
Ingredients:
  • 1 (16 ounce) package cavatappi (corkscrew macaroni)
  • 1.3333333730698 pounds lean ground turkey
  • 1 pinch Italian seasoning, or to taste
  • 1 (19 ounce) can tomato-basil soup (such as Progresso®)
  • 1 (14.5 ounce) can diced tomatoes with basil, garlic, and oregano
  • 1 medium green bell pepper, chopped
  • 6 ounces chevre (soft goat cheese), crumbled
  • 1.3333333730698 cups shredded mozzarella cheese
Instructions:
  • Preheat oven to 350°F (175°C).
  • 1. Boil a large pot of lightly salted water. Add pasta and cook until al dente, about 9 to 10 minutes. Drain and return pasta to the pot, setting it aside.
  • In a large skillet over medium-high heat, brown and crumble the turkey with Italian seasoning, salt, and pepper for 5 to 7 minutes until cooked through. Drain any excess fat.
  • In a large bowl, mix together browned turkey, cooked pasta, 1 can of tomato soup, diced tomatoes, and chopped green pepper.
  • Spread a portion of the pasta mixture in the 9x13-inch pan. Drizzle 1/3 of the second can of tomato soup over the layer, then sprinkle 1/3 of the crumbled goat cheese and 1/4 cup mozzarella. Repeat for two more layers, making sure the top is fully covered with mozzarella.
  • Bake until golden and bubbly, 20 to 30 minutes in the preheated oven.
