Spicy ground turkey and green chile stuffed pasta shells, baked with gooey cheese for a flavorful Mexican casserole.
Ingredients:
  • 1 (12 ounce) box jumbo pasta shells
  • 2 pounds ground turkey
  • 1 (7 ounce) can chopped green chiles
  • 0.75 cup water
  • 1 (1.25 ounce) package taco seasoning
  • 1 cup salsa
  • 1.5 cups shredded Cheddar cheese
Instructions:
  • Bring a pot of salted water to a gentle boil. Cook pasta shells until al dente, about 12 minutes, stirring occasionally. Drain pasta.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C).
  • In a large saucepan, sizzle turkey with chopped green chiles, water, and taco seasoning until turkey is fully cooked and liquid is absorbed, about 8 to 10 minutes. Take off the heat.
  • Evenly layer salsa in the bottom of a 9x13-inch baking pan.
  • Fill each pasta shell generously with the flavorful turkey mixture, then place them delicately on the bed of zesty salsa in the baking dish. Generously sprinkle a layer of sharp Cheddar cheese on top, and gently cover the pan with aluminum foil.
  • Bake in the oven until the cheese is melted and bubbly, for approximately 30 minutes.
