Southwestern Spaghetti Pie

Fusion dish: Spicy turkey stuffed pasta shells blend Mexican and Italian flavors.
Ingredients:
  • 6 oz. uncooked spaghetti, broken into thirds
  • 1/2 lb. lean ground turkey
  • 1 1/4 cups thick & chunky salsa
  • 3/4 cup frozen corn, thawed
  • 1 (15-oz.) can black beans, drained, rinsed
  • 1 teaspoon cumin
  • 6 oz. (1 1/2 cups) shredded Cheddar cheese
  • 2 eggs
Instructions:
  • Prepare spaghetti following package instructions then drain.
  • Preheat oven to 350°F and generously coat a 9 1/2-inch deep-dish glass pie pan with nonstick cooking spray. In a large nonstick skillet over medium heat, cook ground turkey until no longer pink. Drain excess liquid. Add salsa, corn, beans, and cumin; cook for 2 minutes until heated through. Finally, mix in 1/2 cup of cheese and stir until melted.
  • In a large bowl, vigorously beat the eggs until well blended and foamy. Add the cooked spaghetti and toss to coat evenly. Transfer the spaghetti mixture into a greased pie pan, pressing it slightly up the sides to create a crust. Evenly spread the turkey mixture over the spaghetti-lined pan.
  • Bake at 350°F for 15 minutes. Sprinkle the remaining 1 cup of cheese over the pie and bake for an additional 10-15 minutes, or until the crust is light golden brown. Allow it to stand for 10 minutes before serving.
