Baked salmon with zesty avocado mango salsa.
Ingredients:
  • Extra virgin olive oil
  • 4 6-ounce salmon fillets
  • Salt
  • Freshly ground black pepper
  • 2 small or 1 large mango, not overly ripe (1 to 1 1/2 pounds of mango)
  • 2 just ripe avocados
  • 1/4 cup red onion, minced
  • 1 serrano chile, minced (with seeds for more heat, without for less)
  • 2 limes, juiced (about 4 tablespoons lime juice)
Instructions:
  • Preheat your oven to a toasty 400°F.
  • Prepare the mangos: As the oven preheats, peel the mangos and cut the flesh into 1/3-inch cubes, discarding the seed. Place the mango cubes in a medium bowl and set aside.
  • Prepare the salmon fillets: Line a roasting pan with aluminum foil and add a drizzle of olive oil. Coat the fillets with more olive oil, season with salt, and place skin side down on the prepared pan. Bake in a 400°F oven for 10 minutes.
  • Prepare the avocado mango salsa: Halve, pit, score, and scoop out the avocados into a bowl with mango. Add red onion, serrano chile, lime juice, and a sprinkle of salt. Gently combine ingredients and serve over cooked salmon fillets. Enjoy!
