Avocado baked eggs - a simple, nutritious meal anytime of day!
Ingredients:
  • For the everything bagel seasoning
  • 2 tablespoons poppy seeds
  • 1 tablespoon white sesame seeds
  • 1 tablespoon black sesame seeds
  • 1 tablespoon plus 1 teaspoon dried minced garlic
  • 1 tablespoon plus 1 teaspoon dried minced onion
  • 2 teaspoons flaked sea salt or coarse salt
  • For the baked eggs in avocado
  • 3 large Haas avocados, halved and pitted
  • 6 ounces smoked salmon or lox, thinly sliced
  • 6 large eggs
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 1/4 teaspoon red chili pepper flakes, divided
  • 1/3 cup red onion, thinly sliced
  • For garnish
  • 1/2 cup crumbled feta cheese
  • 1 bunch fresh dill, chopped
  • 3 tablespoons capers, drained
  • Everything bagel seasoning
  • Lemon wedges, garnish
Instructions:
  • Preheat the oven to 425°F and lightly oil or spray a baking sheet with nonstick spray.
  • Create the everything bagel seasoning by mixing poppy seeds, white sesame seeds, black sesame seeds, dried garlic, dried onion, and salt in a bowl until thoroughly blended. Keep in a sealed jar or container until needed.
  • Scoop out a generous amount of avocado flesh to widen the center well of each avocado half. Place them on a baking sheet and line the hollows with smoked salmon strips.
  • Season the eggs: In a small bowl, mix salt, freshly ground black pepper, and red pepper flakes. In a separate bowl, crack an egg and season with a pinch of the salt, pepper, and red chili pepper mixture. Gently place the seasoned yolk into the avocado well, trying not to break it. Add any remaining egg whites to the avocado well. Repeat with the rest of the eggs until all avocado halves are filled.
  • Top the eggs with red onion and bake the avocados in the oven for 15-20 minutes until the eggs are cooked to your liking.
  • To finish and present your dish: Take the avocados out of the oven and sprinkle with a generous amount of feta cheese, fresh dill, capers, and everything bagel seasoning. Accompany with lemon wedges for an added burst of flavor.
