Whip up a speedy breakfast by baking eggs in avocado halves.
Ingredients:
  • 2 avocados, halved
  • 4 small eggs
  • 2 rashers bacon, halved
  • 130g punnet vine-ripened cherry tomatoes
  • 4 slices sourdough bread
  • Butter, to serve
  • Sriracha or tomato sauce, to serve
  • Chopped fresh chives, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan forced. Line a large ovenproof chargrill pan with baking paper and heat on high. Crack 1 egg into a small ramekin and set it aside.
  • Coat avocado halves with oil and grill cut side down until charred. Flip avocado halves and crack an egg into each cavity. Repeat with remaining avocados and eggs.
  • Place bacon, tomatoes, and bread in the pan and transfer it to the oven. Bake for 5 minutes or until eggs are set and bacon is crisp (remove toast earlier if it's done). Butter the toast and serve everything topped with sauce and chives.
