Eggs shine in this simple and versatile baked dish, great for brunch or a quick dinner.
Ingredients:
  • 1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
  • 1/4 teaspoon dried oregano leaves
  • 1 clove garlic, finely chopped
  • Dash salt and pepper
  • 2 eggs
  • Shaved Parmesan cheese, if desired
Instructions:
  • Preheat your oven to 350°F and place a 9-inch glass pie plate on a baking sheet with sides.
  • Combine tomatoes, oregano, garlic, salt, and pepper in a 2-quart saucepan. Cook over medium heat for about 3 minutes, stirring occasionally, until heated through.
  • Gently pour the tomato mixture into a pie plate, then crack eggs one by one into the mixture.
  • Bake for 20-25 minutes until the eggs are set, then sprinkle with cheese on top.
