Indulge in gooey melted mozzarella on flavorful tomato and chorizo baked eggs for a delicious breakfast treat.
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, diced
  • 10.00 gm smoked paprika
  • 2 chorizo, sliced
  • 400g can diced tomatoes
  • 60g pea
  • 62.50 ml fresh flat-leaf parsley, chopped
  • 8 Free Range Eggs
  • 100g mozzarella
  • Olive oil, extra, to serve
  • Flat-leaf parsley sprigs, extra, to serve
  • Sourdough bread, to serve
Instructions:
  • Preheat your oven to 200C for a perfect start to your culinary masterpiece.
  • In a medium frying pan over medium heat, heat the oil. Cook the onion, stirring, until soft, about 5 minutes. Add garlic and paprika, cook until fragrant, about 30 seconds. Stir in chorizo, cook for 2 minutes. Add tomato, combine well, then reduce heat to low. Simmer for about 10 minutes until the liquid reduces slightly. Finally, stir in peas and parsley.
  • Divide the tomato mixture evenly into 4 small ovenproof dishes. Gently crack 2 eggs into each dish and top with a generous sprinkle of mozzarella.
  • Bake for 20 minutes or until cheese is melted and eggs are cooked to your liking. Drizzle with extra oil, sprinkle with parsley sprigs, and serve with sourdough.
