Create delicious Honduran baleadas by loading tortillas with toppings like refried beans, eggs, chorizo, cheese, and avocado for the perfect party snack.
Ingredients:
500 g plain flour plus extra for dusting
1tablespoonbaking powder
groundnut oil
2cloves of garlic
2onions
1teaspooncumin
2 x 400g tins of kidney beans
2tablespoons soured cream
white wine vinegar
1–2fresh red chilliesto serve
1bunch of fresh coriander (30g), to serve
1–2limesto serve
220 g higher-welfare chorizo
150 g Cheddar cheese
150 g feta cheese
2–4ripe avocados
4–6 large free-range eggs
chilli sauce
Instructions:
Sift flour and baking powder into a bowl, add 2 teaspoons sea salt, create a well in the center, pour in 125ml oil and about 200ml warm water. Mix with a butter knife until a dough forms, adding more water if needed. Tip dough onto a floured surface, knead for 5 minutes until smooth. Return to bowl, cover and let prove for 1 hour. Heat a bit of oil in a pan, sauté garlic, onion, and cumin for 10 minutes until soft. Add drained kidney beans, soured cream, vinegar, salt, and pepper. Simmer for 5 minutes, then mash or blend beans to desired texture. Divide dough into 12 pieces, roll into balls, flatten, then roll out into tortillas. Dry-fry tortillas in a hot pan for 1 minute each side. Keep warm. Prepare toppings - fry chorizo, grate Cheddar, crumble feta, slice avocados, and fry eggs. Heat bean mixture. Spread beans on tortillas, top with chili, coriander. Serve with lime wedges. Enjoy!
