Baleadas: Grilled homemade tortillas filled with refried beans, avocado, queso fresco, and crema from Honduras.
Ingredients:
  • 1 cup water
  • 0.5 cup vegetable oil
  • 2 cups refried beans, warmed
  • 1 avocado, sliced
  • 0.5 cup crumbled queso fresco (fresh white cheese)
  • 0.25 cup crema fresca (fresh cream)
Instructions:
  • Prepare the tortilla dough by combining flour, water, vegetable oil, egg, and salt in a large bowl. Knead the dough until it is smooth and not sticky. Divide the dough into eight golf ball-sized balls, cover them, and allow them to rest for approximately 20 minutes.
  • Shape each ball of dough into a rustic, thick tortilla.
  • In a hot skillet, brown and puff up each tortilla for about 1 minute per side.
  • Spread a generous layer of refried beans, creamy avocado slices, and crumbled queso fresco on warm tortillas, then finish with a delightful drizzle of crema. Fold the tortillas in half and enjoy!
