Honduran Quesadillas

Festive twist on quesadilla cake: blend all-purpose flour, rice flour, sugar, Parmesan cheese, and sesame seeds.
Ingredients:
  • 1.5 cups margarine
  • 3 cups white sugar
  • 2 cups sifted all-purpose flour
  • 1 cup rice flour
  • 1 tablespoon baking powder
  • 6 room-temperature eggs
  • 2 cups lukewarm milk
  • 2 cups grated Parmesan cheese
  • 0.5 cup white sugar
  • 0.25 cup all-purpose flour
  • 0.25 cup sesame seeds
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and lightly grease and flour a medium glass baking dish.
  • In a bowl, whip margarine and 3 cups sugar until light and fluffy. Add eggs one by one, mixing thoroughly. Mix 2 cups all-purpose flour, rice flour, and baking powder; add them alternately with milk, stirring well after each addition. Gently fold in Parmesan cheese. Pour the batter into the prepared baking dish.
  • Combine 1/2 cup sugar, 1/4 cup flour, and sesame seeds in a small bowl, then sprinkle evenly over the batter in the cake pan.
  • Bake for 45 minutes in the oven until a toothpick inserted in the center comes out clean. Allow to cool fully, then cut into squares.
