Bake salmon with avocado oil, curry, mango, and cilantro for a vibrant and flavorful dish.
Ingredients:
  • 1 (1 pound) fillet salmon fillet
  • 0.25 cup avocado oil
  • 1 teaspoon curry powder
  • 1 mango - peeled, seeded, and diced
  • 0.25 cup diced red onion
  • 1 small serrano pepper, diced
  • 1 small bunch cilantro leaves
  • 1 lime
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) and cover a baking sheet with aluminum foil.
  • Place the salmon on a baking sheet and securely wrap in aluminum foil by folding the edges and crimping to seal.
  • Cook in the preheated oven until tender and easily flakable with a fork, approximately 15 minutes.
  • Combine avocado oil, curry powder, and salt in a small bowl. Drizzle over salmon, then top with diced mango, red onion, and serrano pepper. Garnish with cilantro and a squeeze of lime before serving.
