Green curry salmon with noodle salad

Transport yourself to Thailand with our quick and easy cheat's version of a traditional dish.
Ingredients:
  • 4 (about 200g each) salmon fillets
  • 70.00 gm Thai green curry paste
  • 125ml (1/2 cup) light coconut cream
  • Juice of 1 lime
  • 250.00 ml Rainbow salad
  • 187.50 ml fresh coriander leaves
  • 100g bean thread vermicelli noodles
Instructions:
  • Preheat the oven to 200C. Arrange the salmon fillets in a baking dish. Mix curry paste, coconut cream, and half of the lime juice in a jug. Pour the mixture over the salmon and bake for 16-18 minutes until medium or your preferred doneness.
  • In a bowl, place noodles and cover with boiling water. Let stand for 3-4 minutes until tender. Drain and refresh. Toss with rainbow salad, coriander, and remaining lime juice. Divide salmon among plates and serve with noodle salad.
