Elevate your dinner game with quick and flavorful salmon and snow pea green curry in just 20 minutes!
Ingredients:
  • 200g jasmine rice
  • 4 Skin-On Salmon Portions
  • 1 tsp sesame oil
  • 1 red onion, cut into wedges
  • 100g curry paste
  • 400ml light coconut cream
  • 21.00 gm lime juice
  • 16.00 gm brown sugar
  • 12.20 gm fish sauce
  • 200g snow peas, trimmed
  • 100g sugar snap peas, trimmed, halved lengthways
  • 60g pea
  • 1 bunch asparagus, woody ends trimmed, halved
  • 8.80 gm flaked coconut, toasted
Instructions:
  • In a large saucepan, bring 1 1/2 cups (375ml) water and rice to a boil over high heat. Reduce heat to low, cover, and cook for 10 minutes until rice is tender and liquid is absorbed. Let it sit covered for 5 minutes to steam.
  • Heat a wok or deep frying pan over high heat. Brush the salmon with oil and cook for 2 minutes on each side until cooked to your liking. Place on a plate and cover with foil to keep warm.
  • Heat the rest of the oil in a wok or pan, and sauté the onion for 1 minute. Stir in the curry paste for 30 seconds. Pour in the coconut cream and let it simmer.
  • Heat the remaining oil in the wok or pan until shimmering. Stir in the onion and cook for 1 minute until lightly browned. Add the curry paste and cook for 30 seconds until fragrant. Pour in the coconut cream and simmer until heated through.
  • Combine lime juice, sugar, and fish sauce with the coconut cream in the wok or pan. Stir until the mixture is well combined. Add snow peas, sugar snap peas, peas, and asparagus. Cook for 2 mins until the vegetables are vibrant and tender. Remove from heat.
  • Place the salmon on top of the flavorful curry in the pan and generously sprinkle with coconut. Serve alongside fluffy rice.
