Chilli spaghetti with salmon and snow peas

One-pot pasta with salmon, snow peas, and zesty dressing.
Ingredients:
  • 400g spaghetti
  • 200g snow peas, trimmed, halved diagonally
  • 2 bunches asparagus, trimmed, cut into 4cm lengths
  • 45.50 gm olive oil
  • 21.00 gm fresh lemon juice
  • 2 tsp white balsamic vinegar
  • 1/2 tsp dried red chilli flakes
  • 2.50 gm caster sugar
  • 150g smoked salmon, coarsely chopped
  • Fresh basil leaves, to serve
Instructions:
  • Boil the spaghetti in carefully salted water until it's al dente. Introduce the snow peas and asparagus for the final 2 minutes. Drain and return everything to the pan.
  • In a small bowl, whisk together the oil, lemon juice, vinegar, garlic, chili, and sugar until well combined.
  • Drizzle the oil mixture over the pasta, season with salt and pepper, and mix thoroughly. Finish by garnishing with smoked salmon and fresh basil leaves.
