Spaghetti with chilli sardines and garlic breadcrumbs

Spectacular pantry pasta for sardine enthusiasts.
Ingredients:
  • 375g spaghetti
  • 75.08 gm olive oil
  • 250.00 ml fresh breadcrumbs
  • 4 garlic cloves, crushed
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 2 x 120g cans sardines in oil, drained
  • 3/4 tsp dried chilli flakes
Instructions:
  • Boil pasta in salted water until tender following packet instructions, then drain.
  • In a large, deep frying pan over medium-high heat, heat half of the oil until shimmering. Add breadcrumbs and cook, stirring occasionally, for 2 to 3 minutes until they turn golden. Add half of the garlic and cook for 30 seconds until fragrant. Transfer the mixture to a medium bowl and stir in the parsley.
  • In a pan over medium heat, heat the remaining oil. Add sardines, chili, and remaining garlic, stirring and cooking for 2 minutes until warmed through. Add spaghetti and gently toss together.
  • Season with a pinch of salt and pepper. Garnish with a crunchy breadcrumb topping before serving.
