Vibrant pasta dish enhanced by chili, anchovies, and sun-dried tomatoes for a burst of flavor.
Ingredients:
  • 375g spaghetti
  • 1/4 tsp ground chillies
  • 1 garlic clove, thinly sliced
  • 60g (1/3 cup) drained sun-dried tomatoes, cut into strips
  • 30g drained anchovy fillets in oil, cut into thin strips
  • 70g piece parmesan, shaved
Instructions:
  • Boil the spaghetti in a generous amount of salted water as per package instructions until it's slightly firm. Drain and keep warm in a covered bowl. Keep aside.
  • In a large saucepan over medium heat, warm the oil. Add ground chillies and garlic, cook for 30 seconds until aromatic. Remove from heat, add the spaghetti back to the pan along with tomatoes, anchovies, and half of the parmesan. Toss the spaghetti using tongs to coat in the oil mixture. Serve immediately, sprinkling the remaining parmesan on top.
