Elevate spaghetti with Turkish bread, chili, and garlic crumbs for an irresistibly flavorful twist.
Ingredients:
  • 1/4 Turkish bread loaf, coarsely torn
  • 1 lemon
  • 60ml olive oil
  • 2 garlic cloves, finely chopped
  • 2 birdseye chillies, seeded, finely chopped
  • 3 anchovy fillets, finely chopped
  • 62.50 ml finely shredded flat-leaf parsley
  • 375g spaghetti
Instructions:
  • Add the bread to the food processor bowl and pulse until it becomes coarse breadcrumbs.
  • Zest the lemon using a zester to remove the rind, ensuring to only get the outermost layer. Then, juice the lemon.
  • In a frying pan, heat 2 tablespoons of oil over medium heat. Add breadcrumbs and cook, stirring constantly, for 2-3 minutes until they turn golden and crisp. Then, move them to a plate.
  • Heat the rest of the oil in the pan over medium heat. Sauté garlic, chili, and anchovies for 1 minute until fragrant. Stir in lemon zest, juice, and parsley. Remove from heat.
  • While the sauce simmers, prepare the spaghetti in a large saucepan according to the package instructions until perfectly al dente. Drain thoroughly.
  • Combine the spaghetti with the garlic mixture, ensuring the pasta is fully coated. Then add half of the breadcrumbs and toss until coated evenly.
  • Divide the mixture into serving bowls, top with the remaining crumbs, and serve right away.
