Cheesy parmesan-topped pasta dish - simple and delicious!
Ingredients:
  • 500g spaghetti
  • 56.88 gm extra virgin olive oil
  • 1/2 tsp crushed chilli
  • 100g Sun-Dried Tomatoes, roughly chopped
  • 125.00 ml grated parmesan cheese
  • Extra grated parmesan cheese, to serve
  • Basil leaves, to serve
Instructions:
  • Boil pasta in a large pot of salted water according to package instructions until al dente.
  • Heat oil in a non-stick frying pan over medium heat. Sauté garlic, chili, and tomatoes, stirring often, for 2 minutes until softened.
  • After draining the pasta, bring it back to the saucepan. Combine it with the tomato mixture, Parmesan cheese, salt, and pepper. Toss everything together over low heat until fully mixed.
  • Garnish the pasta with a generous sprinkle of parmesan and fresh basil leaves before serving.
